For Bengalis, monsoons mean a whole range of things – water logging on Kolkata streets, Rabindra sangeet and of course fish. It is not any old fish but the absolute monarch of Bengali cuisine, the hilsa. Come July-August, the gastronomic worship of the hilsa fish is a ritual as firmly fixed on the Bengali calendar as Durga Puja.
