Kashmiri restaurants are famous for wazwan but the students of Institute of Hotel Management in Kashmir are offering something different at biryani and kebab festival. They are aiming to tickle the taste buds of Kashmiris with the Hyderabadi Biryani and soon the Hyderabadi specialty will be available in Kashmiri restaurants.
"The food habits of Kashmiris are changing. People are now going to eat out on weekends. Wazwan is our tradition but people now want something different," said Shabir Ahmad, faculty member Institute of Hotel Management, Kashmir.
Aashiq Hussein is a voracious wazwan eater but for a change he enjoyed biryani.
"It is very good, tasty; it is pakkay ghost key biryani. I am enjoying it. As far as the biryani is concerned the spices are totally different. So I am going to have the taste of Biryani when I go to the restaurant next time," said Aashiq Hussein, local resident.
The road ahead for the Hyderabadi Biyrani to make entry into the restaurant menus here is going to be tough as taste buds of Kashmiris have mostly tasted wazwan for past six centuries.
