3 Summer Salads To Make This Season
They are perfect on a hot summer day

Finding the right kind of meal may not seem important otherwise but it is in summer. Since the need to eat without feeling weighed down while still feeling refreshed is key, the best solution is a salad. Salads can be eaten as a side or can replace your meal in a larger portion. In summer, with the right use of hydrating fruits and veggies, it's possible to make delicious, refreshing salads for yourself that will actually keep you full.

1. Mango Avocado Salad

Make best use of the seasonal favourite mango by mixing it with creamy avocado. It's a match made in heaven.

Ingredients:

1 ripe mango, with flesh cubed

1 ripe avocado, with flesh cubed

1 spring onion, cut finely

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 tablespoon lime juice

1 pinch chilly powder

Method:

In a bowl, mix the lime juice, spring onion and balsamic vinegar well with olive oil. Toss together the avocado and mango in this mixture and finish off with a sprinkling of chili powder.

 

2. Watermelon Feta Salad

This classic is perfect to hydrate on a summer day, is simple to whip up and has a nice bite to it.

Ingredients:

1 cup argula or rocket leaves

2 cups watermelon chunks, deseeded

A palmful of mint leaves

Half cup feta cheese, crumbled or chopped into cubes

2 tablespoons pine nuts

Balsamic vinegar

Olive oil

Method:

In a bowl, combine argula and mint with the watermelon. Top with a drizzle of olive oil and balsamic vinegar so that they coat the ingredients well. Add the chunks of feta cheese to it and garnish generously with pine nuts.

 

3. Tuna Cucumber Salad

With an interesting combination of vegetables and tuna being the hero of the dish, this Mediterranean inspired salad will leave you wanting more.

Ingredients:

1 lettuce, leaves torn to smaller size

Quarter cup cherry tomatoes

Half cup feta cheese, cubed

1 palmful of dill leaves

1 cup tuna, chunks or diced

1 cucumber, diced

Quarter cup green olives

Olive oil

Method:

In a bowl, mix lettuce, tomatoes, dill, cucumber and olives. Drizzle with olive oil and toss the ingredients. Finally, add feta cheese and tuna chunks.
