1. Gulkand Ice Cream
(Recipe By Chef Arvind Rai, Executive Chef, The Ashok, New Delhi)
A delightful ice-cream recipe that is easy to make and tastes the right amount of sweetness
Ingredients:
Vanilla Ice Cream: - 55 ml
Gulkand: - 15 gms
Roohafza: - 05 ml
Method:
1.Mix all ingredients together
2.Keep in refrigerator for 5-6 hours
3.When well set, scoop out and serve well garnished
2. Sheer Khurma
(Recipe By Chef Rajesh Singh, Executive Sous Chef, Taj Mahal, New Delhi)
Sheer Khurma is an authentic version of vermicelli pudding specially prepared for Eid festivities. This Eid recipe is a traditional delicacy that is made differently in different households.
Ingredients:
500 ml milk, full cream
50-gram Vermicelli (broken into small pieces), roasted
1/4 cup Sugar
2 tbsp. Dates, chopped
1/4 cup Raisins
1/4 cup Almonds (cut into pieces), blanched
1/4 cup Pistachios
1/4 cup Ghee
1/2 tsp. Saffron
1/2 tsp. chiroli seeds
1/2 tsp. Cardamom powder
Method:
1.Take a pan, pour ghee in it over medium flame.
2.Add almonds, raisins and pistachios to it. Sauté well.
3.Now in another hot pan with ghee, add vermicelli. Roast well.
4.In another wide pan simmer the milk till it thickens, add sugar and simmer again.
5. Add the roasted vermicelli and dry fruits along with dates and saffron.
6.Mix well till simmering. Add cardamom powder. Bring to simmer.
7. Serve chilled, garnished with dates.
3. Matka Phirni
(Recipe By Chef Rajnish Singh, Executive Chef, Biryani By Kilo)
The perfect dessert to a wholesome meal, Eid celebrations are incomplete without the classic phirni
Ingredients:
3 ltr milk (Full cream)
1 kg powder rice
400-gram sugar
50ml saffron milk with saffron
1 ltr milkmaid
1 tsp cardamom powder
Cut Almonds
Method:
1. Take a large pan/kadai and boil the milk
2.Stir occasionally and simmer for 10 minutes.
3.Keep the flame on low or till the milk thickens.
4. Add powder rice and milkmaid
5.Stir continuously for 5 minutes. Else, lumps might form.
6. Simmer for another 5 minutes stirring in between.
7.Boil the milk till the rice gets cooked completely.
8. Further add 1/2 cup of sugar and saffron milk.
9.Mix well till the milk thickens and turn creamy.
10. Add in cardamom powder and mix well.
11. Finally, serve chilled phirni garnished with few chopped nuts.
4. Mirchi Ka Halwa
(Recipe By Chef Sanjay B Dasari, Executive Chef, ITDC )
Halwa is the most favourite and sought-after dessert recipe. This halwa recipe sure brings its own twists and turns.
Ingredients:
Capsicum (Color of your choice): 250 gms
Milk: 200 ml
Khoya: 30 gms
Sugar: 50 gms
Green cardamom: 02 gms
Desi ghee: 20 ml
For Praline:
Sugar: 50 gms
Gud/Jaggery: 05 gms
Sesame seeds: 05 gms
Method:
1.Wash the capsicum and finely chop.
2.Boil the chopped capsicum in milk. When the milk starts to evaporate completely add in sugar.
3. When sugar is properly melted add in ghee, Grated khoya and cardamom powder. Stir for two more minutes and take out from the fire.
4. Before serving mix in the praline and garnish with grated khoya.
To prepare praline:
1. Dry roast the sesame seeds.
2. Melt/ caramelize the sugar add in the roasted sesame and grated Jaggery. Mix and pour out the mixture on to a marble top to dry out.
3.When it is set and dry crush the mixture and take out the praline chips.
