Discuss Goa and the beach is bound to come up in conversation. While the location of the shore visited and its foot traffic is sure to be discussed, dining by the seaside is a rare delight saved for a special occasion. Whether its hand-in-hand with a partner to bring in an anniversary or to cut a cake as one turns a year older; if the sea breeze doesn't blow the candles off for you, that is; sharing a meal on the shore while soaking in the divinity of nature is as good as it gets. Sea water practically runs in a Goan's veins and the beach is part of their very being. I steadfastly believe that amongst all the seaside meals I've eaten, mine at St Regis' Susegado restaurant truly was as good as it gets. I'm talking about my luxury dining experience at the spot under the stars with the sea as a close companion on this edition of #SheSays.

Even non-konkani language speakers will surely identify the word susegad. Roughly translated as a state of languid relaxation, it exemplifies the vibe of St Regis' elevated luxe version of a Goan beach shack. At Susegado, ambiance is everything. Situated on the shore of Mobor beach at the end of the St Regis property, it requires a walk through sand and is best enjoyed in the outdoor area, surrounded by palm trees and sea breeze. One is ushered into the restaurant under a series of circular wooden arches, which is an alcove of a cane and wood. The soft strains of a live music couplet adds pleasant background ambiance for guests without interrupting their conversations. Coconut trees dot the outdoor seating on the sand and is set with diffused lighting, lending a romantic vibe most effortlessly. For those seated indoors, upturned wicker baskets with glowing filaments light up the ceiling in the bar. The seasonal restaurant opens post the monsoon months, making this a year-round luxury dining destination, as long as the skies remain clear.
The sea intertwines its inspiration into Susegado's cocktails. There's the locally inspired Estuary, which is made with dukshiri feni mingled with fresh grapefruit and orange bitters. The Mobor Smash, named after the beach it sits on, is created with the very renowned cashew feni perfumed with mango leaf, pickled mango brine and spiced bitters. I'd recommend the Goan Mary, which is a St Regis take on the classic Bloody Mary cocktail. In this one however, their secret ingredient is traditional Goan spice which gives the drink its signature heat.
As Susegado is set on the shore, the highlight of its menu is what it lies closest to. The restaurant is inspired by the concept of surf and turf, however it definitely leans more towards the surf, which is natural given its location. From the tantalising red snapper to succulent lobster, the choices are wide; each more delicious than the next. The divine scent of Goan masalas wafting from their kitchen was the result of their attention to detail, as they make sure the flavours and ingredients produced are as authentic as it comes.
The menu maneuvers between continental fare like stir fried meat and warm salads to steamed fish and wok tossed mussels, steaming hot in their shells. I'd recommend digging into their catch of the day that's fresh off the grill and delicately sauteed, to truly experience the seafood without it being overpowered. Sustainable fishing lies at the heart of Susegado as local fishermen offload their prized catch of the day at the property, which makes it onto one's tables within hours. Whether it is the local mackerel or magnificent tiger prawns, the produce is freshly caught and that's evident in every morsel. Worry not if you're vegetarian however, as the menu includes mini vegetable turnovers, a tropical deck salad, foraged mushrooms and more.
If you're fortunate enough to be present at dusk at Susegado, you'll get a chance to witness magic. The Champagne Sabrage is a signature St. Regis ritual that takes place on the patio of Susegado every evening at 6.30pm. The Chief Butler tells of the tale of Napolean Bonaparte and the origin of champagne sabering. This is followed by a glass of bubbly for all as the sun dips into the horizon.
Susegado encompasses the tranquil charm of Goa, served most hospitably in the signature St Regis glory. From the deliciously fresh seafood to the locally-inspired cocktails to the rustic yet charming ambience, your trip to the sunshine state won't be complete without a visit here. You may have been to plenty of popular restaurants and raging beach shacks before but Susegado is a luxury experience that no other South Goan spot can offer you. You can trust this South Goan on that.
