Start your Ganesh Chaturthi celebrations on a right note with Shilpa's healthy besan coconut barfi recipe which contains no refined sugar. We've listed the steps to follow below.

Step 1 - Roast 1 and half cup of besan in three-quarter cup of ghee on the stove and stir continuously while doing so. You can replace the full quantity of ghee with half cup coconut oil and 2 tablespoons ghee.

Step 2 - In a separate pan, roast half cup of fresh coconut. You can replace this with desiccated coconut if necessary.

Step 3 - In a third utensil, create a syrup by melting half cup water and 1 cup jaggery until it is completely liquid.

Step 4 - Fold the coconut into the besan mixture and stir well until it has combined.

Step 5 - Next add in the jaggery syrup gradually to the besan and coconut mixture until it is all incorporated slowly.

Step 6 - Add to this 1 and half teaspoon of cardamom powder and stir well. An optional addition is 1 and a half tablespoon of flaxseed powder at this point.

Step 7 - Add pistachios, cashews and almonds to the barfi. Also add 1 tablespoon of melon seeds and incorporate in the mix.

Step 8 - Grease shallow plates to set it in with ghee and flatten the mixture into the plate to set. Add muskmelon seeds on top, allow it to cool for an hour and cut into shape.
