Wazpora, a locality in Srinagar in the Kashmir Valley, is named after 'Waza,' the Kashmiri term for chefs associated with the traditional Wazwan cuisine. Ahead of the festival of Eid-al-Fitr, the area is filled with the aroma of spices and the flavours of meat-based preparations...Many of those preparing the special dishes have been in the business of making Wazwan, the multi-course meal central to Kashmiri cuisine cooked on special occasions like weddings and festivals, for generations.
