Before preparing the dish, it is paramount that you thoroughly clean potatoes so that no dirt, residue or pesticide is left.

Use potatoes that are high in starch which will allow you to prepare a creamy and rich delicacy.

Peeling potatoes
Based on your preference, peel the potato. If you like creamy stuff, peel potaoes before boiling and if you want chunkier texture, peel them after boiling.
